I enjoy cooking scrambles. It is a good way of using leftovers. I had leftover hot links roasted sweet potatoes red potatoes Yukon Gold Potatoes onions and eggs. I enjoyed this scramble the hot links and some spice to the dish. Please leave a like 👍 or a comment.

One of my favorite things to do is smoke meat. This weekend I decided to treat myself to some baby back ribs. I always use a dry rub on my ribs. I rub them the night before and I massage the rub into the meat. I always add a little mustard. The mustard helps keep the meat from drying out. Next day take your ribs out of refrigerator get them to room temperature before smoking them. I smoke 💨 my ribs at 180 low and slow. I check on them every couple of hours. Last hour I add a sauce a sauce or glaze. Take them off. Let them rest and enjoy. If you don’t feel you can do this project, Always support a family owned business that has learned how to smoke meat.

I am breakfast person. I always enjoyed having breakfast with my parents growing up. My mom would make Denver omelette. Here is my version Denver Egg Scramble. I think something we all need to do during this season of life is reflect on memories that we enjoy. I am reflecting on two for today. The first picture is reflecting on the first time I was in a bamboo forest. I enjoyed all the different sounds and smells. My second photo is a sunset. I enjoy stopping and watching the sunset. It gives me a time, when I can reflect on all the positive things that happened in my day and look back at the challenges and reflect on lessons learned from those challenges. I am thankful for everyday I have on this journey.
